This is one of those ✨no measurements, just vibes✨ recipes. I was craving dumplings but didn’t have any wrappers at home. I did have zucchini, chicken, shallots, ginger, and coriander, and a freezer stocked with lemongrass, lime leaves, and chilli. The beauty of dumplings is that the contents are flexible, so I got to work freestyling and highly recommend you do the same! Zucchini is a fab dumpling wrapper replacement for anyone avoiding (or allergic to) gluten - and when steamed becomes super soft and buttery.
Regarding the amounts, you know the drill: if you end up with too much filling and not enough zucchini ribbons, make little meatballs. If you end up with too much zucchini and not enough filling, sauté the the ribbons in a bit of sesame oil and enjoy them as a little snack.
