In the meantime, I wanted to share an umami-rich, labour-intensive recipe for you to mindlessly stir away in these weird, unstructured days between Christmas and New Year’s Eve. You’re gona be caramelising those onions, so be sure to be armed with some kind of entertainment (my holiday go-to is any of the Sissi movies).
It’s not a soup, not a stew, it’s first and foremost a bowl of slop, but it’s delicious and chewy and full of layers (like an onion, get it). Also, for the many people who have asked me what the difference between a soup and a stew is; I think the correct answer is that you can eat an entire bowl of stew using a fork, whereas you inevitably need a spoon to finish a bowl of soup.
